
RECIPE :
"Eggplant Salad"
Ingredients :
1 400g Eggplant sliced ( about 1.0 cm thick) ; 2-3 Cloves garlic finely minced ;
3 small red fresh chili finely minced ; 1 spring onion finely chopped ; 50 ml Olive oil ; 2 Table sp hot water; 2 Table sp Soy sauce ; 1 Table sp brown vinegar; 1 tea sp chicken powder ,Sesame oil , Salt and Sugar.
Method :
Firstly, Steam the Eggplant sliced about 15-20 minutes... When it became soft and put it aside, and let it cool down naturally...
Secondly, Move the Eggplant steamed into a deep plate , then put the Chili minced and the Garlic minced on the top .
Thirdly, add about 50ml Olive oil into a frying pat and heat it to a slight smoking hot , then quickly pour the Oil on the garlic / chili ...
Finally , to make a "sauce" : add 1 tea sp chicken powder and a pinch of salt into a small bowl with hot water ( 2 Table sp ) and wait them melt ; then add 2 table sp Soy sauce ,1 table sp brown vinegar , a few drops sesame oil and a tea spoon sugar to mix together. Then pour the "sauce" on the top of the garlic / chili... at last add the spring onion chopped on the top - ready to serve !
