                Fried food, a risk of cancer !
 - Research found what people eat in daily life  is  relation to  their health.    

     Cooking oil, when it reused for many times, and often eat the fried food that would be a big risk  of cancer. The research found  that when cooking oil repeatedly reused, it will develop a toxic substance, called Malondialdehyde, - a carcinogen . Malondialdehyde has some toxicity that can cause injury to human cell's biological membrane,  and has a potential carcinogenicity . The digestion, absorption, respiration, reproductive functions and the movement of human body, which are relying on enzyme's  reaction ( Enzyme is fundamental to organ's survival ) . However, Malondialdehyde can severely affect enzyme' s activity, accelerate  the aging of the organism and cause  the incompatible with the protein. 
 
    Laboratory tests have shown that after cooking oil repeatedly reused for three times, the Malondialdehyde content could rise to 10 times. After cooking oil repeatedly reused for 7 times, Malondialdehyde content risen about 30 times.


 Also, according to the latest study   that a continuous high temperature frying oil for 6 hours, the Oil will start to deterioration, with the increase of high - temperature frying time, frying oils can produce another harmful substance ,  Acrylamide - A carcinogen as well.

     Experts suggest that the fried food unfit to eat.  In particular, those fried food  cooked by reused oil ( It is possible that in some restaurants , some food services/ shops or kitchens, due to cost concerns, the cooking oil could be reused for numerous times ). 


    The  findings  from Cancer Council Australia shown that  Cancer rate is increasing and cancer is a leading cause of death in Australia . An estimated 128,000 new cases of cancer will be diagnosed in Australia this year. 1 in 2 Australian men and 1 in 3 Australian women will be diagnosed with cancer by the age of 85 .

    The latest Cancer Statistics worldwide from World Cancer Research Fund International points out  that Cancer rate is increasing globally . There were an estimated 14.1 million cancer cases around the world in 2012 . The number is expected to rise to 19.3 million by 2025 . The top 10 countries with highest cancer rate for all cancers ( excluding non- melanoma skin cancer ) are Denmark, France, Australia, Belgium, Norway, United States of America, Ireland, Korea, Republic of , The Netherlanders and New Caledonia. 


    Australia is at the 3rd ( for both sexes ) in the top ten of highest Cancer rate in the worldwide. 
  Australia ranks at 2nd for men only in the top ten list of highest cancer rate in the worldwide.

 How to make  delicious Chili Oil ? 


      RECIPE:

"Home-made Chili Oil"

Ingredients :  
Red chili powder 60g
Sichuan pepper 20g
Sesame seeds 30g
Garlic dried 5g
 Vegetable oil 500ml

RECIPE

 "Spicy Potato Salad" 

Servings 8 . Time  30 minutes

Ingredients :
1 kg Potatoes , Peeled, finely sliced, ( keep soaking in cold water ).
1 red Onion, thinly sliced
1 red Capsicum , thinly sliced
2 celery stalks and leaves, sliced
2 Cup basil leaves chopped
2 Spring  Onions, thinly chopped
1/4 Cup lemon juice or brown vinegar
1/2 Cup Peanut oil or Olive oil
2 Clove garlic, finely grated or minced
1/2 Cup soy sauce
1/2 Cup Chili oil
Salt , Sugar and Black pepper...

Method :
Step 1 : fill  hot water  in a  big pot ( around an half full ) , when it start boiling , add Potatoes drained into the pot, stir it , and cover it with lid. As soon as it boils , take the pot off from stove, drain / strain the Potatoes... then soak the potatoes into cold water container ... drain/ strain the Potatoes  ( repeat it for two times ), then put it aside to let it drain very well ...    Then add the peanut oil / olive oil and mix together  ... Then add a pinch of salt , and mix ...  Put aside .

Step 2 :  Put the red onion, red capsicum , celery , basil leaves and spring onions into a salad bowl, add a pinch of salt, mix up together, put aside.

Step 3 : Put the Potatoes and the bowl of vegetables  into a larger salad bowl  together , add the garlic and mix them up  . Then add the soy sauce, the lemon juice / brown vinegar, then add Chili oil and a teaspoon of sugar , to mix up ...   
-  ready to serve .

Note : If you do not like Chili, just not add the Chili Oil.

Method : 
Put  Chili powder 30g, Sichuan pepper 20g , Garlic dried 5g and Sesame seed 30g  into a container ( not glass made ) and mix them together.

Heat oil in a saucepan / pot until about high heat ( light smoke ), take off from stove, after about 1 minute ,add the half of the oil into the container ( using a soup-spoon) and slowly stirring to mix ...
after about 3 minutes, add the rest of oil into the container, while stirring, add another 30g Red chili  powder , stirring , then cover it with a lid.

set aside in safe place ( do not reach kids ) in normal temperature for about 24 hours/ overnight  ...  It will be your delicious home-made chili oil in following day.  Enjoy !

RECIPE:
"Tomatoes stir frying Eggs"
Servings 2. Time 15 minutes

Ingredients:
4 eggs beaten in a bowl
4 tomatoes sliced
3 Clove garlic, finely grated or minced

Cooking Oil, Salt

Method :
Put 100 ml cooking oil into a frying pan when it  is warm. 
Add a pinch of salt into eggs , mix and whisk 
When the oil hot , pour the eggs  into the frying pan  .  stir frying  the eggs  to a gold color ...
Add the tomatoes sliced into the frying pan , Mix it with the eggs , Stir frying ...
Add a bit  Salt  , Mix ,
Add 50ml water, mix and cook
Add the garlic mince when the tomatoes become soft , Mix , cook about 2 munites 


... ready to serve

Tips : When the  temperature  of oil is high ,  to  stir frying eggs to be a gold color, the  eggs/ dish  will become  the most  tasting.

"Radish  Bone soup"   (1)

​            
1, Preparation:                                                                                   
  • One white radish ( sliced)                                               
  • A few pork bones                                                                   
  • Three pieces of ginger                                                            
  • Three clove garlic                                                                      
  • A few white pepper ( whole)                                                    
  • Chicken powder    

  • Salt                                                                                  


                                       2, Method :          

  1,Add the pork  bones into a pot with cold water  .                         2, Add ginger, white pepper and the garlic into it   .                

  3, Cook them until the bone became soft
  .                                     4, Add radish sliced into the pot and cooking ...        

 5, When the radish became
 
soft , add a  teaspoon of chicken powder  and a pinch of salt .
​        
​ 6, Add a bit spring onion on the top - ready to serve .


                             
      Note: eat the Soup when it is still very warm/not cold,and keep yourself in warm at home/do not out IF you are in Cold/ Flu.

 First step : drain / strain the Potatoes sliced ... then soak them  into cold water again and wash  it until the water become  clean    ( no white color water ) ; drain/strain the potatoes and  put aside...

 Preparation:  
​ 
Ingredients :

1 kg Potatoes peeled and finely sliced, ( keep it soaking in cold water ).
1 green Capsicum , thinly sliced
2 celery stalks and leaves, sliced
2 Cup basil leaves chopped
2 Cup Peanut oil 
2 Clove garlic, finely grated or minced
 Dry Chili, Chinese Sichuan pepper , soy sauce,  brown vinegar, chicken powder ,Salt , Sugar and Black pepper.                                                                            

Second step ​:  Add 2 cups of Peanut Oil into a Saucepan when it very hot;  Add Salt, Dry chili and Chinese sichuan
pepper into the pat  when the smoke of oil to be seen ; Quickly add the vegetables,  stir frying them until the color changed; then quickly add Soy sauce, Brown vinegar, Sugar and Chicken powder and mix up quickly... then add black pepper powder and mix up ( Ready to serve -
So delicious ! )

     WATCH WHAT YOU EAT !


On October 26, the International Agency for Research on Cancer ( IARC) that affiliated with the World Health Organization ( WHO) released news that processed meat is Carcinogenic food, and all kinds of red meat probably is too .

         
 What is the processed meant ?     What is the red meant ?


  Processed meat -  usually refers to  food supermarkets  sale of bacon, ham, sausage, corned beef, dried meat like beef jerky or South African biltong , canned meat or meat-base sauces . Processed meat products usually were pickled with salt, sodium nitrite or potassium nitrate , and so on ... The products usually are salt, pink color or deep red color ( You can find the words "sodium nitrite" on the ingredient list of the products at food supermarkets -  "sodium nitrite" is the cause of cancer risk and that is what people fear about !

  "sodium nitrite" can make meat a pretty pink color,control the proliferation risk of clostridium botulinum, extend shelf-life and produce a unique flavor of meat.


  Red meant -
such as beef, veal, pork , lamb, mutton, horse or goat are red meat . Because all red meat  also contain glyphosate - "glyphosate", the active ingredient in many weedkillers - That's why even if red meat is not processed meat and it was classified as "probable" carcinogen by WHO.

  -Much epidemiological investigation found that eating processed meat increases the risks of colorectal cancer and it contritutes to the risk of prostate cancer and pancreatic cancer. Some research also suggested that processed meat may be associated with breast cancer risk .  In other words, compared with those who do not eat processed meat, and people who love eating it and often eating it , they would have more chances of having cancer , especially colon cancer.

      RECIPE: 

  "Sliced Chicken with Veges"
      Servings 2, Time : 25 minutes


  Ingredients: 
  •   4 pieces of Chicken leg meat 
  • 2 Clove garlic, 
  •  ginger or ginger powder
  •  Sweet Chili 
  • CHINESE FIVE SPICE
  • 1 white egg
  •   Potato powder Or Chinese bean powder
  • Soy sauce
  • Vinegar 
  • Chicken Powder
  • Salt
  • Oil
  • ( Vegetables :  1/2 Red Capsicum sliced ; 1 carrot sliced;             200g broccoli
  • 1 Spring onions  - cut to 2 cm short )     


  Preparation: 
 

 Step 1 : Marinade (Marinade the chicken for 10 minutes) with :
 2 tsp soy sauce
 1 white egg
 2 tsp potato powder
 2 tsp sweet chili
 2 Clove garlic , finely grated or minced
​ 2 pieces of ginger, finely grated or minced ( or 1 tsp ginger powder)
 1 tsp of CHINESE FIVE SPICE
 Pinch of salt

Step 2:  Soak carrot sliced and broccoli with hot boiling water for 5 minutes;
 (drain the water off the vegetables ,  then put aside).


​Method :
Add 150- 200 ml Oil into a hot pan,
Add the chicken ,when the oil became hot enough to smoking, then stir frying quickly,
Add the veges ( red Capsicum, carrot sliced and broccoli ) into the pan  as soon as the meat color changed to  the white,  mix them quickly and stir frying...
Add 1tsp Soy Sauce, 1/2 Vinegar and 1 tsp chicken powder and quickly mix/stir frying
Add the spring onions, mix quickly
... ready for serve.

    Ingredients:
  • 1/2 kg Slim beef ( Sliced )
  •  Ginger 
  • Garlic
  • Sweet Chili
  • CHINESE FIVE SPICE
  • 1 egg (White)
  • Potato powder/ Chinese bean powder
  • Chinese cooking wine
  • Rosemary ( herb)
  • 1 Green Capsicum sliced
  • Salt, Soy sauce, Vinegar, Chicken powder and Oil

Marinade:                                                                                                            Method:

Marinade the beef with Chinese cooking wine for 2 minutes, then add:                        Add 150-200ml cooking Oil into a pan
2 tsp soy sauce                                                                                                                                       Add the beef and  stir frying  when the oil became hot enough to smoking
1 white egg                                                                                                                                              Add the Capsicum as soon as the  color changed                                                            
 3 tsp potato powder                                                                                                                           Add 1 tsp Vinegar, 1 tsp Soy sauce, chicken powder and 1 Clove garlic minced. 
 2 tsp sweet chili                                                                                                                                     Ready to  serve...
 2 Clove garlic , finely grated or minced
​ 2 pieces of ginger, finely grated or minced ( or 1 tsp ginger powder)
 1 tsp CHINESE FIVE SPICE
a bit rosemary minced
 Pinch of salt and a bit of Oil 
Mix ,massage, and Marinade for about 10-15 minutes.

 Sweet Potato leaf  Salad

Ingredients:
  • Light  soy sauce
  • A Clove garlic  finely grated or minced
  • Olive oil
  • A drop of Sesame oil

   Method : 
  • Pick off the leaves,  drain off the water after washed ,then  put  the leaves  into a big container 
  • Pour boiling water on the leaves, then drain off the water after the leaves  color changed and became soft...
  • Move the leaves into a plate , then  add all ingredients above. 
  • Ready to enjoy - Delicious and very healthy ​

                                                                "Spicy Chicken "

  Ingredients: 
Chicken meat 1 kg
​ soy sauce                          
 white egg                                                                                                                                                                               potato powder                                                                   
  chili  flake                                                                                                                                  
  garlic  finely grated or minced
​  ginger, finely grated or minced ( or 1 tsp ginger powder)
 CHINESE FIVE SPICE
 rosemary minced
basil leaves chopped
 Water,salt , Cooking Oil and Chili Oil.

                                                                                                                          Method : 

First Step : 
 Marinade the chicken meat                                                                                         Second Step: Bake it in Oven

Add a Pinch of salt and massage the meat , then leave it for about 5 minutes...                                                                           Tune on Oven with 200 degree heat ;

Then add 2 tsp soy sauce  ,1 white egg , 2 tsp potato powder , 2 tsp chili  flake ,                                                                          
 Put all meant into a flat tray ;  
2 tsp cold water,2 Clove garlic  finely grated or minced, 2 pieces of ginger                                                                                    
Put the tray into The Oven and baking for 30 minutes 
finely grated or minced ,1 tsp CHINESE FIVE SPICE, a bit rosemary minced ,                                                                                  ( after it switched on for 10 minutes ).
then mix , massage the meat for a bit, then add 2 tsp cooking oil and mix them ,                                                                         Then take out the tray from the Oven, 
- Marinade it in fridge for about 20-30 minutes                                                                                                                   to turn every pieces of chicken's top side to bottom ,
                                                                                                                                                                                                                             Then bake the meat for another 30 minutes .                                                                                                                                                                                                            ( bake each side for 30 minutes respectively ).

                                                                                                                                                                                                                             Finally, add the basil leaves and mix ...
                             
 Third Step :  Add Chili Oil 

​

    Mix up 5-8 spoon of Chili Oil and 3 tsp of Say sauce  in a small bowl  , then pour it on the top of the chicken  and mix up ... Add a bit Spring  Onion on the top... - Delicious !

    "Goji Pigeon egg Soup"

                   Ingredients: 

                    15g Goji berries
                           3 Pigeon eggs

                     
                Method : 
  •      Firstly, cook 3 Pigeon eggs for 1 minute, then peel the shell .​
  • Secondly, use a pot with water , add 15g Goji berries and the 3  Pigeon eggs peeled together and cook a soup about 15 minutes.​                                                                           
  •  Eat 3-5 times a week ( eat with honey ).

                     Recipe :      " Radish Pork Soup "
                                                                              (2 )

Ingredients: 
  •  300 g Pork mince
  • ​800 g White Radish 
  • 2 Clove garlic, 
  • 3 pieces of  ginger or ginger powder
  • Corn flour 
  • Soy sauce 
  • white egg
  • Chicken powder 
  • Salt 
  • Olive Oil​

                              Method :

1, Cook the White Radish sliced with  2 pieces ginger , 1 Clove garlic and  1000 ml water  together...

2, Use a big container to hold  the 300g Pork mince with 2 spoons corn flour, 1 white egg, 1 piece ginger ( finely grated ),1 Clove garlic (finely grated ), a bit salt , 1 Spoon Soy sauce and 2 SPoons of water together , and Mix and massage them for a minutes ...

3, When the Radish became soft ( need about 20 minutes ) ,  to use a SPoon as a tool to make meat balls quickly -  add  meat ball one by one  into the boiling  pot of radish soup... Stir them and quickly cover with the pot lid. When it starts boiling again , add a bit Chicken powder, a bit salt and a few drops of Olive Oil. Switch off the fire quickly and start eating when it is warm.

                                               Note: If you do not like Pork or not  eat any meat, you just cook the Radish Veg with the ingredients.
